For the Soup
  • 2-3 large eggs
  • 1/4 stalk green onion
  • 1 handful dried anchovies (for broth)

Cooking Instructions

Step 1

For today’s soup, we’ll need fresh eggs, crisp green onions, and dried anchovies to create a refreshing broth. Feel free to add your favorite vegetables like mushrooms or zucchini if you like!

Step 2

First, crack 2-3 eggs into a bowl and whisk them well. Whisking with a fork until the yolks and whites are combined will result in an even smoother soup.

Step 3

Pour about 3-4 cups of water into a pot and bring it to a boil over high heat. We’ll be making an anchovy broth, so make sure to use enough water.

Step 4

I’ve taken out some dried anchovies, which my mother carefully prepared for me, from the freezer. It’s incredibly convenient to have them prepped like this when you’re cooking. Using them little by little from the freezer helps keep them fresh.

Step 5

Once the water starts boiling vigorously, add all the dried anchovies you prepared. To avoid a fishy smell, it’s best to boil them for about 5 minutes over high heat.

Step 6

After the anchovies have infused their flavor into the water, use a fine-mesh sieve or strainer to remove all the anchovies. We just want the clear and refreshing anchovy broth.

Step 7

Wash the green onion thoroughly and slice it thinly. Slicing it finely will add a wonderful aroma to the soup, making it even more delicious. Once the anchovy broth is boiling, add the sliced green onion first and let its fragrance infuse.

Step 8

Now, slowly drizzle the whisked eggs into the pot along the edge, in a circular motion. Avoid stirring immediately; let the eggs set and float like beautiful flower petals.

Step 9

As the eggs begin to cook, season the soup with salt to taste. Adding a little soy sauce can enhance the umami flavor, but today I’m using just salt for a clean taste. Let it simmer a bit longer until the eggs are fully cooked.

Step 10

Voila! Our clear and refreshing egg drop soup with anchovy broth is complete. The soft eggs, fragrant green onions, and revitalizing broth look absolutely delicious.

Step 11

The anchovy broth gives the soup a truly refreshing and clean flavor. Combined with the tenderness of the eggs, it’s the perfect dish to enjoy with a bowl of rice. This simple soup is ready in just 10 minutes! Enjoy a delicious and satisfying meal with this wonderful egg drop soup. ^^
