Simple and Refreshing Potato Soup
Easy Recipe for Single Households: Potato Soup
Today, I’ve made a simple yet refreshing dish perfect for those living alone!
Ingredients
- 2 potatoes (medium-sized)
- 1/2 onion
- Water (as needed)
- 1/2 handful dried anchovies (for broth)
- 1 Korean chili pepper (cheongyang pepper)
- 1-2 Tbsp soy sauce for soup (guk-ganjang)
- 1 pinch of salt
Cooking Instructions
Step 1
Add water to a pot, along with the dried anchovies and one Korean chili pepper. Bring to a boil and simmer for 20-30 minutes to create a flavorful anchovy broth. This will form the base of your soup.
Step 2
While the broth is simmering, peel and dice the potatoes and onion into bite-sized cubes. Remove seeds from the chili pepper and slice it thinly on an angle.
Step 3
Once the broth has a rich anchovy aroma, add 1-2 tablespoons of soy sauce for soup (guk-ganjang) to season. Adjust the amount to your taste. Then, add a pinch of salt to fine-tune the seasoning.
Step 4
Add the diced potatoes and onion to the pot with the broth. Cook until the potatoes are tender and float to the surface. This usually takes about 10-15 minutes.
Step 5
Ladle the soup into bowls and serve hot. Enjoy your delicious and simple homemade potato soup!
