Simple & Delicious Chicken Salad
An Effortless & Diet-Friendly Chicken Salad Recipe
Here’s a chicken salad that’s perfect for a light snack and friendly to your diet! This salad was born from my desire to recreate a Caesar salad I loved at home, but in a much simpler way. The sauce, made with yogurt, is light and won’t weigh you down. The ingredients are inexpensive and readily available, making this a nutritious and convenient meal that hits all the right notes.
Main Ingredients
- 4 Chicken nuggets
- 1 Slice of processed cheese
- 1 Egg
- 1/4 Head of cabbage
Dressing Ingredients
- 2 Tbsp Greek yogurt
- 2 Tbsp Sweet chili sauce
- 2 Tbsp Sugar
- 1.5 Tbsp Water
- 2 Tbsp Greek yogurt
- 2 Tbsp Sweet chili sauce
- 2 Tbsp Sugar
- 1.5 Tbsp Water
Cooking Instructions
Step 1
The salad we’re making today uses ingredients commonly found in your kitchen. Ready to start? First, place the egg and 1 cup of water in a pot and boil for 10 minutes until hard-boiled. While the egg is cooking, you can prepare the other ingredients to save time.
Step 2
Lightly oil a heated frying pan. Add the chicken nuggets and fry them on both sides until golden brown and crispy. Once fried to perfection, place the nuggets on a paper towel to drain excess oil, and let them cool for about 5 minutes.
Step 3
Wash the cabbage thoroughly, pat it dry, and then cut it into bite-sized pieces or shred it finely. We want to keep that crisp texture, so try not to cut it too thinly.
Step 4
Once the chicken nuggets have cooled slightly, slice them into approximately 1 cm thick pieces. Slicing them while they’re too hot might cause them to crumble, so letting them cool a bit will help maintain their shape beautifully.
Step 5
While the egg is boiling, combine all the dressing ingredients in a small bowl: 2 tablespoons of Greek yogurt, 2 tablespoons of sweet chili sauce, 2 tablespoons of sugar, and 1.5 tablespoons of water. Whisk everything together with a whisk or spoon for about 1 minute until smooth and well combined. The key is to achieve a creamy, lump-free sauce.
Step 6
There you have it – your delicious homemade dressing is ready! Now, let’s assemble all the prepared ingredients attractively.
Step 7
Start by arranging the cut cabbage on your salad plate. Sprinkle the thinly sliced or torn processed cheese over the cabbage for an added layer of cheesy flavor.
Step 8
Next, artfully place the hard-boiled egg and the sliced chicken nuggets on top of the salad. The combination of warm nuggets and fresh greens will be delightful.
Step 9
Finally, drizzle your specially made sauce all over the salad. Your healthy and delicious chicken salad is now complete! Enjoy your meal!
