Step 1
First, prepare the star of your dish: the beef. Choose a lean cut like eye of round, sirloin, or shank, about 400g, ensuring it has a nice grain and minimal fat. This quantity is good for 2 servings and can be refrigerated for later enjoyment. If there’s any surface blood on the meat, a quick rinse will make the final dish even cleaner. Slice the prepared beef along the grain into bite-sized pieces (about 2-3 cm). This helps the marinade penetrate better and ensures a tender texture when cooked. You can also substitute lean pork for beef for a delicious alternative.
Step 2
Place the sliced beef in a bowl and prepare the braising sauce. Combine 50g sugar, 40g soy sauce, 100g water, 1 Tbsp minced garlic (or 2 tsp garlic powder), 1 Tbsp oyster sauce, 2 Tbsp minced onion (or 2 tsp onion powder), 1 chopped Korean red pepper, and 0.5 tsp ginger powder. Mix everything well. If you don’t have minced garlic, you can use thinly sliced whole garlic cloves, but for a clearer sauce, using garlic powder and onion powder is recommended. Gently toss the beef with the sauce until evenly coated. Let it marinate for at least 1 hour. For an even deeper flavor, marinate for 2-3 hours or even overnight in the refrigerator.
Step 3
Transfer the marinated beef and all the marinade into your rice cooker. Add an additional 100g of water to ensure the beef doesn’t dry out and cooks evenly. Select the ‘Steam’ or ‘Multi-cook’ function on your rice cooker and set it to cook for 25 minutes. Once the cooking cycle is complete, do not open the lid. Leave it on the ‘Keep Warm’ setting for about 20 minutes to allow the residual heat to tenderize the meat further. This slow, gentle cooking process helps the beef become incredibly tender and absorb the flavors of the sauce deeply. The longer it simmers with residual heat, the more tender the meat will become, so feel free to extend this resting time slightly.
Step 4
After the 25-minute steam cycle and the subsequent 20-minute ‘Keep Warm’ period, turn off the rice cooker and carefully remove the lid. The braised beef made in the rice cooker can be stored in an airtight container in the refrigerator for 3-4 days. When you’re ready to eat, simply portion out what you need and reheat it gently in the microwave or on the stovetop until warm. It will taste almost as good as freshly made.
