First, prepare the aromatics and protein for your stir-fried noodles. Finely chop the green onion. Slice the Vienna sausages into bite-sized pieces, about 2-3 segments each. Prepping your ingredients like this will make the cooking process much smoother.

Step 2

The key to perfect stir-fried noodles is to cook them slightly ‘al dente’ or ‘chewy’ compared to regular soup noodles. Use slightly less water than the package instructions suggest. Boil the noodles with only the dried vegetable packet for about 3 minutes. Be careful not to overcook them until they become mushy. Leave just a tiny bit of the cooking water in the pot; this will help the noodles retain their firm texture after stir-frying.
