Donut Dough Ingredients
- 80g glutinous rice flour
- 80g cake flour (rice flour)
- 50g almond flour
- 1/4 tsp baking powder
- 3 eggs
- 1 cup sugar (approx. 150g)
- 4 tbsp milk
- 6 tbsp grapeseed oil (or other vegetable oil)
Pink Sugar Glaze
- 1 cup powdered sugar (approx. 120g)
- 2 tbsp lemon juice
- A little food coloring (pink)
- 1 cup powdered sugar (approx. 120g)
- 2 tbsp lemon juice
- A little food coloring (pink)
Cooking Instructions
Step 1
In a large bowl, crack the 3 eggs and add 1 cup of sugar. Whisk them together with a whisk until well combined and the sugar has dissolved. Whisking until it turns a slightly ivory color will be beneficial.
Step 2
Add 6 tablespoons of grapeseed oil and 4 tablespoons of milk, and mix gently again. Ensure it’s mixed evenly to prevent the oil from separating.
Step 3
Sift 80g of glutinous rice flour, 80g of cake flour, 50g of almond flour, and 1/4 tsp of baking powder into the bowl with the wet ingredients. Sifting the dry ingredients helps create a smooth and lump-free batter. Use a spatula or whisk to gently combine until no dry flour is visible, completing the batter. Be careful not to overmix, as this can develop gluten and result in a tough texture; mix just enough to incorporate the dry ingredients.
Step 4
Fill your prepared donut molds about 70-80% full with the batter. Place the donuts in a preheated oven at 170°C (340°F) and bake for approximately 20 minutes. You can check for doneness by inserting a skewer; if it comes out clean, they are ready. Once baked, carefully remove the donuts from the mold and let them cool completely on a wire rack. Cooling them thoroughly is essential to prevent the glaze from melting or dripping off.
Step 5
Now, let’s make the sugar glaze. In a small bowl, add 1 cup of powdered sugar. Gradually add 2 tablespoons of lemon juice, stirring as you go. The mixture might be thick initially, so adjust the amount of lemon juice to achieve the desired consistency. Add a tiny amount of pink food coloring, drop by drop, and mix well until you achieve the desired pink hue. The glaze should be slightly pourable; too thick will make it difficult to spread, and too thin will cause it to run off too much.
Step 6
Dip the completely cooled donuts into the prepared pink sugar glaze, coating the tops, or use a spoon to generously drizzle the glaze over them. Gently shake off any excess glaze. Allow the glaze to set completely on a wire rack for a short while. Your cute Simpsons Donuts are now complete!
