This recipe is a fantastic way to use up any leftover skewered jeon (Korean savory pancakes) from holidays like Lunar New Year or Chuseok. In just 10 minutes, you can create a delightful ‘Skewered Jeon Gimbap’. It’s a quick, easy, and incredibly tasty dish that’s perfect for a light meal or a satisfying snack.
Ingredients
- 1 serving cooked rice
- 1 sheet of dried seaweed for gimbap (gim)
- 2 leftover skewered jeon
- 3 eggs
- A pinch of salt
- A pinch of sesame seeds
- A pinch of sesame oil
- 2 Tbsp cooking oil
Cooking Instructions
Step 1
In a bowl, combine the cooked rice with a pinch of salt, a pinch of sesame oil, and a pinch of sesame seeds. Mix well to season the rice. Ensure the rice isn’t too sticky, as this can make rolling difficult.
Step 2
Lay the gimbap sheet on a bamboo rolling mat. Spread the seasoned rice evenly over the sheet, leaving about a 1-2 cm border along the top edge. This helps to seal the roll.
Step 3
Carefully remove the skewers from the leftover jeon. Place the jeon pieces onto the rice, arranging them neatly. Tightly roll the gimbap, pressing gently to ensure it’s firm and doesn’t unravel. Make sure the filling is snug within the rice.

In a separate bowl, whisk the 3 eggs until well combined. You can remove the chalazae (the white stringy bits) for a smoother texture. Add a tiny pinch of salt to the egg mixture to enhance the flavor.

Heat 2 tablespoons of cooking oil in a non-stick frying pan over medium-low heat. Pour half of the beaten egg mixture into the pan, spreading it thinly. Once the egg is about halfway cooked, place the rolled gimbap into the pan and carefully roll it to coat it with the egg. Pour the remaining egg mixture over the gimbap and continue to roll, ensuring it’s fully coated. Cook until both sides are golden brown.
Step 6
Once the gimbap is cooked, remove it from the pan and let it cool slightly. Brush a little sesame oil over the surface for a glossy finish. Slice the gimbap into bite-sized pieces. It’s best to let the gimbap cool a bit before slicing; cutting it while too hot can cause it to crumble.
