Earl Grey Financiers (Makes 6)

Lotus Financiers (Makes 6)
- 60g cake flour
- 1 pinch of salt
- 25g sugar
- 60g finely ground almond flour
- 3g baking powder
- 8 Lotus Biscoff cookies
- 83g unsweetened almond milk or soy milk
- 40g vegetable oil (e.g., canola, grapeseed)
- 5 drops vanilla extract or oil
- 60g cake flour
- 1 pinch of salt
- 25g sugar
- 60g finely ground almond flour
- 3g baking powder
- 8 Lotus Biscoff cookies
- 83g unsweetened almond milk or soy milk
- 40g vegetable oil (e.g., canola, grapeseed)

Cooking Instructions
Step 1
Let’s start with the ‘Earl Grey Financier’ batter. In a clean bowl, combine 60g of cake flour, a pinch of salt, 25g of sugar, 60g of finely ground almond flour, and 3g of baking powder. Add the tea leaves from 2 Earl Grey tea bags. Whisk all dry ingredients together until evenly combined.
Step 2
Now, for the ‘Lotus Financier’ batter. In a separate bowl, add 60g of cake flour, a pinch of salt, 25g of sugar, 60g of finely ground almond flour, and 3g of baking powder. Mix them lightly. Lotus cookies are not added at this stage.
Step 3
It’s time to add the wet ingredients to the ‘Earl Grey Financier’ batter. Pour in 83g of unsweetened almond milk or soy milk, 40g of vegetable oil, and 5 drops of vanilla extract or oil. Mix well. The vanilla will enhance the rich flavor of the financiers.
Step 4
Add the wet ingredients to the ‘Lotus Financier’ batter as well. Similarly, combine 83g of unsweetened almond milk or soy milk, 40g of vegetable oil, and 5 drops of vanilla extract or oil. Mix thoroughly. The base for both batters is now ready.
Step 5
Using a spatula or whisk, thoroughly mix the batters in both bowls until no dry flour is visible and the mixture is smooth. Avoid overmixing. The key is to achieve a well-combined, smooth consistency.
Step 6
Continue mixing the batters as before. For the ‘Lotus Financier’ batter, finely crush 2 of the Lotus Biscoff cookies and gently fold them into the batter with a spatula. Ensure the crushed cookies are evenly distributed throughout the dough.
Step 7
Transfer each batter into a piping bag. If you don’t have piping bags, you can use a zip-top bag by cutting off a small corner. This makes shaping the financiers much easier.
Step 8
Grease your financier molds thoroughly with baking spray or a light coating of oil. This prevents the batter from sticking and ensures the finished financiers release easily.
Step 9
Cut the tip of your piping bag or zip-top bag to your desired size. Pipe the batter into the prepared financier molds, filling each mold about 80% full. Filling them too much may cause them to overflow during baking.
Step 10
For the ‘Lotus Financiers’, after piping the batter, place one remaining Lotus Biscoff cookie on top of each one as a garnish. This adds an extra layer of the delicious, rich lotus flavor.

Now it’s time to bake. Preheat your air fryer or oven to 190°C (375°F) and bake for 10 minutes. Then, reduce the temperature to 180°C (350°F) and continue baking for another 10 minutes. Keep an eye on them to prevent burning.
