Ingredients
  • 1 large Egg
  • 60g Sugar (approx. 4 Tbsp)
  • 1g Salt (a pinch)
  • 3g Vanilla Extract (approx. 1/2 tsp)
  • 110g Cake Flour (approx. 1 cup)
  • 4g Baking Powder (approx. 1 tsp)
  • 85g Milk (approx. 6 Tbsp)
  • 10g Butter (approx. 1 Tbsp)

Cooking Instructions

Step 1

Crack 1 large egg into a clean bowl. Gently whisk it, being careful not to create too much foam.

Step 2

Add 60g of sugar and 1g of salt to the egg. Whisk well until combined. Since the quantity is small, a hand whisk is sufficient instead of an electric mixer. Continue whisking until the sugar dissolves.

Step 3

Stir in 3g of vanilla extract for added fragrance. Whisk gently until the egg mixture turns a lighter shade of yellow. The vanilla scent helps mask any eggy smell, resulting in more delicious cupcakes.

Step 4

Sift 110g of cake flour and 4g of baking powder into the egg mixture. Gently fold them in with a spatula until just combined, ensuring there are no lumps. Avoid overmixing, as it can toughen the cake.

Step 5

Take out half of the batter and add half of the prepared 85g of milk (about 40g). Mix until the flour is just incorporated and no dry streaks remain. Overmixing can lead to a tough cake, so be mindful.

Step 6

Melt 10g of butter by microwaving it for about 30 seconds. Pour the melted butter into the batter and quickly mix it in.

Step 7

Now, pour in the remaining milk (about 45g) into the batter.

Gently mix everything together until you have a smooth cupcake batter. The batter should have a glossy appearance when completed.

Step 9

Prepare by lining paper muffin cups inside ice cream paper cups. If you have silicone muffin molds, you can pour the batter directly into them. Using paper cups helps maintain a nice shape and makes them easy to remove.

Using a ladle, scoop the batter into the prepared muffin cups, filling each about 80% full. The cupcakes will puff up as they steam, so avoid overfilling.

Fill a steamer pot with enough water and bring it to a boil over high heat. Wait until the water is vigorously boiling and steam is rising generously.

Carefully place the muffin cups filled with batter into the steaming pot. It’s crucial to place them in only after the water is boiling and plenty of steam is generated, ensuring the cupcakes steam up moistly.

Step 14

Wrap the lid of the steamer with a kitchen towel before covering. This prevents condensation from dripping onto the cupcakes, which can make them soggy. Cover the lid and steam over medium-low heat for about 20 minutes.

Step 15

After 20 minutes, check if the cupcakes are nicely steamed. Insert a skewer into the center; if it comes out clean, they are fully cooked.

Step 16

Carefully remove the steamed cupcakes from the steamer and place them on a wire rack to cool slightly. Gently take them out of the cups.
