Main Ingredients
  • 100g Spam (about 1/3 to 1/2 of a standard can)
  • 1 serving of Kimchi (well-fermented kimchi recommended)
  • 1 Egg

Seasoning and Stir-fry Ingredients
  • 1/2 Tbsp Oyster Sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 2 Tbsp Water
  • A little Olive Oil or cooking oil
  • A pinch of Black Pepper
  • 1/2 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Oligodang (corn syrup) or Sugar
  • A sprinkle of toasted sesame seeds (optional)

Cooking Instructions

Step 1

Start by preparing the Spam. Open the can and measure out the required amount.

Step 2

Finely chop the kimchi. If your kimchi is very ripe, you might want to add a pinch of sugar. For the Spam, place it in boiling water for 1-2 minutes to remove excess grease and impurities. Drain it and then slice it into bite-sized pieces, about 1cm thick.

Step 3

Heat a pan over medium heat and add the sliced Spam and chopped kimchi.

Step 4

Add all the seasoning ingredients to the pan: 1 Tbsp Mirin, 1/2 Tbsp Oyster Sauce, 2 Tbsp Water, 1/2 Tbsp Oligodang, and a pinch of black pepper. (You can also add the 1/2 Tbsp Gochugaru at this stage.) Finally, drizzle a little olive oil around the edges of the pan.

Step 5

If you’ve already added the Gochugaru with the other seasonings, you can skip this step. Stir-fry everything quickly to combine the ingredients.

Step 6

Continue stir-frying until the sauce coats the ingredients evenly and the Spam and kimchi are nicely browned. You’ll notice a delicious aroma filling your kitchen.

Step 7

Spoon a generous portion of the flavorful Spam and kimchi mixture over a bowl of warm rice. Feel free to add shredded seaweed (gim) or a drizzle of sesame oil for extra flavor.

Step 8

Finally, top your Spam and Kimchi Rice Bowl with a fried egg, preferably with a runny yolk! Break the yolk and mix it into the rice for an extra creamy and delicious experience. Your Spam and Kimchi Rice Bowl is now ready to enjoy!
