Making Pork Neck Steak at Home: Recipe for Special Steak Sauce and Refreshing Garlic Dressing

Remembering how much my children loved the pork neck steak at a fusion restaurant, I decided to make it as a special treat for them. Now you can enjoy a restaurant-quality pork neck steak right in your own home. Steak Ingredients
  • 3 slices of pork neck, approximately 0.8cm thick
  • 3 Tbsp olive oil
  • A small amount of brown sugar
  • A small amount of herb salt
  • A small amount of nutmeg
  • 2 cloves whole garlic

Special Steak Sauce
  • 2 Tbsp A1 Steak Sauce
  • 1 tsp oyster sauce
  • 1 Tbsp soy sauce
  • 3 Tbsp mirin (sweet rice wine)
  • 1 Tbsp ketchup
  • 2 Tbsp corn syrup
  • 100cc water
  • 1 tsp garlic powder
  • 1 Tbsp cornstarch
  • 2 Tbsp water (for cornstarch slurry)

Garnishes | Sides
  • Pineapple rings (canned)
  • Cherry tomatoes
  • Canned corn
  • Assorted fresh salad greens
  • 1 fried egg
  • Creamy mashed potatoes
  • Grated Grana Padano cheese
  • Homemade Garlic Dressing

Garlic Dressing
  • 1 Tbsp minced garlic
  • 4 Tbsp mayonnaise
  • 5 Tbsp milk
  • 1 Tbsp lemon juice
  • 1 Tbsp honey
  • A pinch of salt
  • 1 Tbsp olive oil

Cooking Instructions

Step 1

Thoroughly pat the pork neck slices dry with paper towels to remove excess blood. Then, gently tenderize the meat by tapping it with the back of a knife. Make shallow cuts across the surface of the pork neck to help the marinade penetrate better.

Step 2

In a bowl, combine the prepared pork neck with olive oil, herb salt, nutmeg powder, and brown sugar. Rub the mixture evenly over the meat. Let it marinate for at least 20 to 30 minutes to allow the flavors to develop.

Step 3

Heat a pan over medium-high heat and add a little olive oil. Place the marinated pork neck in the hot pan. Sear the steaks for a few minutes on each side until golden brown and nicely caramelized. Then, reduce the heat to medium-low and continue cooking until the steaks are cooked to your desired doneness, flipping occasionally. During this stage, you can add whole garlic cloves to the pan to infuse their aroma into the meat.

Step 4

As the steaks near doneness, you can add a knob of butter to the pan and baste the meat with the melted butter for extra richness and a glossy finish. (This step can also be done during the searing process.)

Step 5

Keeping the steaks aside temporarily, use the same pan (with the rendered fat and browned bits) to make the sauce. Pour in the A1 Steak Sauce, oyster sauce, soy sauce, mirin, ketchup, corn syrup, water, and garlic powder. Bring the mixture to a simmer over medium heat, scraping up any browned bits from the bottom of the pan to incorporate all that wonderful flavor into the sauce.

Step 6

While the sauce is simmering, prepare the cornstarch slurry by mixing 1 Tbsp cornstarch with 2 Tbsp water until smooth. Gradually whisk the slurry into the simmering sauce, a little at a time, until it reaches your desired thickened consistency. Cook for another minute or two to ensure the starch is fully cooked.

Step 7

Arrange your chosen side dishes on a plate – such as fresh salad greens, pineapple rings, cherry tomatoes, canned corn, a fried egg, and creamy mashed potatoes. Place the cooked pork neck steak on top. Generously ladle the warm steak sauce over the steak. Finish by drizzling with your homemade garlic dressing and a touch of balsamic glaze for a truly impressive presentation. Enjoy your restaurant-style pork neck steak!
