Cooking Instructions
Step 1
Prepare the Beef: Start with 300g of beef, ideally a cut like coulotte steak suitable for grilling. Blanch it in boiling water for just 10 seconds. This helps to remove any gamey odors and ensures a clearer broth.
Step 2
Rinse and Drain: Rinse the blanched beef under cold water to thoroughly remove any remaining blood. Gently pat it dry with paper towels for a cleaner result.
Step 3
Prepare the Radish: Peel the 400g of daikon radish and slice it into approximately 1.5cm thick pieces. Slicing them too thinly might cause them to break apart during cooking, so aim for a medium thickness.
Step 4
Season the Radish: In a bowl, toss the sliced radish with a bit of red pepper flakes. This step not only adds a beautiful color but also deepens the flavor when stir-fried.

Prepare Stir-fry Oil: Mix a little sesame oil and cooking oil in a small bowl. This mixture will be used to stir-fry the radish.

Stir-fry the Radish: Heat the oil mixture in a pan. Add the seasoned radish and stir-fry until it becomes slightly translucent and begins to soften.

Add Water and Simmer: Pour enough water into the pan to cover the stir-fried radish. Cover the pot and simmer over medium heat for about 15-20 minutes, or until the radish is tender. Once the radish is tender, add the prepared beef and more water if needed.

Season with Soy Sauce: Once the soup comes to a boil, add 3 tablespoons of soy sauce for soup. Taste and adjust as needed, as this forms the base of the soup’s flavor.
Step 9
Add Fish Sauce for Umami: Stir in 2 tablespoons of fish sauce to enhance the soup’s depth and umami. You can use anchovy fish sauce or sand lance fish sauce.
Step 10
Finish Cooking: Add 1 tablespoon of minced garlic and let the soup simmer for another 10 minutes. This allows all the flavors to meld together, creating a rich and refreshing spicy beef and radish soup. You can add a pinch of black pepper to taste.
