Tofu Braising Ingredients
  • 1 block firm tofu (340g)
  • 2 Tbsp chopped green onion
  • 2 Korean chili peppers (cheongyang)
  • 2 Tbsp frozen mixed vegetables (optional)
  • 400ml water
  • Tofu braising sauce

Tofu Braising Sauce Ingredients
  • 4 Tbsp Gochugaru (Korean chili powder)
  • 4 Tbsp Guk-ganjang (Korean soup soy sauce) or regular soy sauce
  • 2 Tbsp Mirin (rice wine)
  • 2 Tbsp Maesilcheong (plum syrup)
  • 2 Tbsp minced garlic
  • 1 tsp minced ginger
  • 2 Tbsp natural seasoning powder (e.g., kelp powder, shiitake mushroom powder)
  • 1 tsp vinegar (optional, adds flavor)

Cooking Instructions

Step 1

First, let’s make the delicious braising sauce for the tofu. In a bowl, combine 4 Tbsp of gochugaru and 4 Tbsp of soy sauce, mixing them well. Then, add 2 Tbsp of mirin and 2 Tbsp of plum syrup, stirring until smooth.

Step 2

Next, add 2 Tbsp of minced garlic, 1 tsp of minced ginger for extra aroma, and 2 Tbsp of natural seasoning powder for a boost of umami. If you like a hint of tanginess, you can also add 1 tsp of vinegar to your preference. Mix all the seasonings thoroughly. Let the sauce rest in the refrigerator for about 1 hour to allow the flavors to deepen.

Step 3

The key to great braised tofu is using ‘firm tofu’! It holds its shape well without breaking, making it perfect for braising. Slice the tofu into bite-sized pieces for preparation.

Step 4

Now, arrange the sliced tofu in a pot or pan that you will use for braising. Try to leave a little space between the pieces so they don’t stick together as much.

Step 5

Pour the rested sauce evenly over the tofu. Add the 2 chopped Korean chili peppers for a spicy kick, and sprinkle the chopped green onions attractively on top. If you have frozen mixed vegetables, you can add them now too. Pour in 400ml of water to cover the ingredients generously. Cover the pot with a lid and bring it to a boil over high heat.

Step 6

As it boils, the sauce will start to thicken and become richer. Keep an eye on it to prevent it from boiling over. Once the sauce has reduced a bit, lower the heat to medium-low. Keep the lid on and let it simmer gently, allowing the flavors to penetrate deep into the tofu. At this stage, taste the sauce and adjust seasoning if needed: add more soy sauce if it’s too bland, or a little water if it’s too salty.

Step 7

When the sauce has thickened significantly and the tofu is well-coated with flavor, it’s almost ready. Be careful not to over-braise, as the tofu can become mushy. It’s best to turn off the heat when there’s still a bit of sauce remaining. The tofu should be tender and infused with the delicious sauce.

Step 8

Transfer the finished braised tofu to a serving plate. Garnish with a sprinkle of sesame seeds. Your spicy, refreshing, and clean-tasting braised tofu is complete! Because you used firm tofu, it holds its shape beautifully, making for a more satisfying experience. This dish is a true ‘rice thief’ – it’ll have you finishing your rice in no time!
