Spicy and Refreshing Crab Stew

A simple crab stew made with minimal ingredients, enhanced by fresh green onions. Enjoy its clean and refreshing broth, perfect for a hearty meal!
Main Ingredients
- 1/2 onion, cut into large pieces
- 2 stalks green onion, cut into large pieces
- 1 red chili pepper (for garnish or added spice)
- 2 crabs (cleaned or self-prepared)
Seasoning
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp minced garlic
- 1 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, fill a pot with about half water and bring it to a boil. While the water is heating up, you can prepare the vegetables to save time.
Step 2
Cut the onion into large pieces, about the width of two knuckles of your index finger. Cut the green onions into lengths of about two knuckles of your index finger; this size holds up well in the broth while adding flavor.
Step 3
Slice the red chili pepper diagonally. In a separate bowl, combine 2 tablespoons of doenjang and 1 tablespoon of gochujang to create your seasoning paste.
Step 4
Prepare the crabs. Using pre-cleaned crabs makes the process much easier. If preparing them yourself, be sure to thoroughly clean out the innards and gills.

Once the water begins to boil vigorously…

Add 1 tablespoon of doenjang to the boiling water and stir well to dissolve. This forms the savory base of your broth.

Carefully add the prepared crabs to the pot.

Next, add the large pieces of green onion and onion. If you have radish (mu), thinly slicing and adding it at this stage will make the broth even more refreshing and deep in flavor.

Finally, add the remaining doenjang and gochujang, stirring them in to combine with the broth. Ensure the pastes are fully dissolved to achieve a uniform color and taste.

Once all ingredients and seasonings are in, add 1 tablespoon of minced garlic and continue to simmer. Skim off any foam that rises to the surface during cooking to keep the broth clear and clean.
