  • 500g Pork Shoulder (sliced)
  • 4-5 Green Onions (scallions)

Sauce
  • 4 Tbsp Soy Sauce
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 6 Tbsp Vinegar
  • 2 Tbsp Sugar
  • 2 Tbsp Cooking Wine (like Mirin)
  • 1/2 tsp Black Pepper

Cooking Instructions

Step 1

Start by preparing your green onions. Wash 4-5 stalks thoroughly under running water. Then, thinly julienne them using a knife or a mandoline slicer. Thinly sliced green onions are key to the dish, so aim for uniform, thin strands!

Step 2

In a medium bowl, combine the julienned green onions with all the sauce ingredients. Add 4 Tbsp soy sauce, 4 Tbsp gochugaru, 6 Tbsp vinegar, and 2 Tbsp sugar. For added depth and to help tenderize the pork later, also incorporate 2 Tbsp of cooking wine (like Mirin) and 1/2 tsp of black pepper. (The sauce ratio is approximately Soy Sauce:Gochugaru:Vinegar:Sugar = 2:2:3:1).

Step 3

Put on a pair of disposable gloves to keep your hands clean. Gently toss the green onions with the sauce until evenly coated. Massaging them softly will help the flavors meld beautifully and create a delicious seasoned green onion salad.

Step 4

Now, it’s time to cook the pork! Heat a skillet or wok over high heat. Add the 500g of pork shoulder slices and sear them until they are nicely browned on all sides. This high-heat searing locks in the juices. To eliminate any porky odor and enhance flavor, sprinkle 2 Tbsp of cooking wine and 1/2 tsp of black pepper over the pork as it cooks.

Step 5

Once the pork is mostly cooked and has a beautiful golden-brown color, reduce the heat to medium-low. This allows the pork to cook through gently without burning, ensuring a tender result.

Step 6

Add the prepared seasoned green onions directly on top of the cooked pork in the skillet. The heat from the pork and the pan will begin to gently cook the green onions, releasing their aromatic fragrance.

Step 7

Finally, stir-fry everything together for about 1-2 minutes, ensuring the pork and green onions are well combined and coated in the delicious sauce.
