- Joraengi tteok (snail-shaped rice cakes) 1 handful
Cooking Instructions
Step 1
Today, I’ll share the golden recipe for Samgyeopsal Jeyuk Bokkeum, a beloved Korean stir-fried pork dish! This recipe combines the rich, fatty flavor of pork belly with a perfectly balanced spicy and sweet sauce, complemented by crisp vegetables for a truly satisfying meal.
Step 2
First, prepare your ingredients. Cut the pork belly into bite-sized pieces, about 3-4 cm long. Slice the carrot into half-moon shapes and the onion into strips. Roughly chop the cabbage. Slice the green onions and red chili peppers diagonally. If using Joraengi tteok, soak them in water for a short while to soften.
Step 3
In a bowl, combine the cut pork belly with the seasoning ingredients: Gochujang (2 Tbsp), Gochugaru (1 tsp), soy sauce (2 tsp), sugar (1 tsp), minced garlic (1 tsp), and a pinch of black pepper. Gently mix everything together with your hands, ensuring the pork is evenly coated. Let it marinate for 10 to 20 minutes to allow the flavors to meld.
Step 4
Before you start stir-frying, drain the soaked Joraengi tteok. This will help them cook evenly and absorb the sauce beautifully.
Step 5
Heat a pan over medium heat and add the marinated pork belly. Stir-fry until the pork begins to brown. Then, add the prepared onion, carrot, and cabbage to the pan. Continue to stir-fry until the vegetables start to soften. If the mixture seems too dry or starts sticking to the bottom, add 2-3 tablespoons of water. Once the pork and vegetables are partially cooked, add the drained Joraengi tteok, sliced green onions, and red chili peppers. Stir everything together and cook for another 2-3 minutes, until all ingredients are tender and well combined.
Step 6
Once everything is cooked through and the sauce has thickened slightly, turn off the heat. Congratulations, your delicious Spicy and Sweet Stir-Fried Pork Belly (Samgyeopsal Jeyuk Bokkeum) is ready! Serve it generously over a bowl of hot rice for a hearty meal, or enjoy it wrapped in fresh lettuce leaves.
