- 1/2 Onion
- 2 Green Onions
- A little Carrot
- 1 Cheongyang Pepper (Korean chili pepper)
- 1 Red Bell Pepper
Sauce Ingredients
- 3 Tbsp Rice Wine (or Mirin/Sake)
- 1 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Minced Garlic
- 0.5 tsp Grated Ginger (or ginger powder)
- 3 Tbsp Soy Sauce
- 1 Tbsp Oligodang (corn syrup/honey)
- 2 Tbsp Maesil Cheong (Plum Extract)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- 1 Tbsp Cooking Oil
- A pinch of Sesame Seeds
- A pinch of Black Pepper
- 3 Tbsp Rice Wine (or Mirin/Sake)
- 1 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Minced Garlic
- 0.5 tsp Grated Ginger (or ginger powder)
- 3 Tbsp Soy Sauce
- 1 Tbsp Oligodang (corn syrup/honey)
- 2 Tbsp Maesil Cheong (Plum Extract)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- 1 Tbsp Cooking Oil
- A pinch of Sesame Seeds
- A pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare 500g of pork shoulder, the star of our Jeyuk Bokkeum. Gather any leftover vegetables from your fridge. Slice 1/2 onion thinly, cut 2 green onions diagonally, and prepare a little carrot if you like. Also, slice 1 Cheongyang pepper and 1 red bell pepper diagonally for spice and color.
Step 2
If you want to speed up cooking, it’s best to mix the sauce ingredients in advance. In a large bowl, add 3 tablespoons of rice wine (or Mirin/Sake). Then, add 1 tablespoon of sugar and 2 tablespoons of Gochugaru (Korean chili flakes).
Step 3
Next, add 1.5 tablespoons of minced garlic, which is excellent for removing pork odor, and 0.5 teaspoon of grated ginger (or a pinch of ginger powder) for added flavor. Don’t forget to add 3 tablespoons of soy sauce to enhance the savory taste of the pork.
Step 4
Add 1 tablespoon of Oligodang for gloss and sweetness, 2 tablespoons of Maesil Cheong for a refreshing flavor, and the key ingredient, 2 tablespoons of Gochujang (Korean chili paste). Stir thoroughly with a spatula or spoon until all sauce ingredients are well combined to create a delicious sauce.
Step 5
Now, let’s start stir-frying! Heat 1 tablespoon of cooking oil in a pan. Add the sliced green onions first and stir-fry over medium-low heat to create ‘green onion oil’ infused with their aroma. Once the aroma is released, add the sliced onion and the prepared pork shoulder. Stir-fry until the pork is about 80% cooked and the surface turns white. Cooking the pork to this point is important.
Step 6
When the pork is over 80% cooked, pour in all the pre-mixed sauce. It’s better to cook over medium heat rather than high heat, stir-frying for about 3-5 minutes until the sauce is well absorbed by the pork. Make sure to stir frequently to prevent burning.
Step 7
Once the sauce has nicely coated the pork and a delicious aroma fills the air, add the prepared red bell pepper and Cheongyang pepper. Stir-frying a bit longer after adding the peppers will enhance their spicy fragrance and make the dish look even more appetizing.
Step 8
Finally, for a softer texture, add some bok choy and cook briefly (you can skip this if bok choy is unavailable). Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for a nutty aroma, and season with a pinch of black pepper to finish.
