  • 400-500g Sweet Potato Stems
  • A little Green Onion (finely chopped)

Seasoning Ingredients
  • 1 tsp Salt (for blanching)
  • 1 Tbsp Olive Oil
  • 1 tsp Minced Garlic
  • 2 Tbsp Soy Sauce
  • 1 tsp Fish Sauce (or Anchovy Sauce)
  • 1-2 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • 2 Tbsp Oligodang (or corn syrup)
  • 1 tsp Sesame Oil
  • A little Sesame Seeds (for garnish)

Cooking Instructions

Step 1

Peel the outer skin of the sweet potato stems thoroughly. Bring a pot of water to a rolling boil, add 1 tsp of salt, and blanch the stems for 1-2 minutes. Immediately rinse them under cold water and squeeze out any excess moisture. This helps keep the stems crisp and vibrant.

Step 2

Cut the drained sweet potato stems into bite-sized pieces, about 5-7 cm long. Cutting them too long might make them difficult to stir-fry or eat.

Step 3

In a mixing bowl, combine the prepared sweet potato stems, finely chopped green onion, and all the seasoning ingredients (minced garlic, soy sauce, fish sauce, gochugaru, oligodang). Gently mix everything together with your hands until the seasoning is evenly distributed. Avoid overmixing to keep the stems intact.

Step 4

Heat 1 Tbsp of olive oil in a pan over medium heat. Add the seasoned sweet potato stems and stir-fry for 3-4 minutes. If you prefer a softer texture, you can increase the cooking time. Stir occasionally to prevent the seasoning from burning.

Step 5

Just before turning off the heat, drizzle in 1 tsp of sesame oil and sprinkle with a little sesame seeds for added fragrance and flavor. Your delicious stir-fried sweet potato stems are now ready!
