Spicy Sauce
  • 7 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp corn syrup (for shine and sweetness)
  • 1/2 pear (grated, for tenderizing and sweetness)
  • 1/3 cup cheongju (rice wine, for removing gamey odors)
  • 1/2 cup soy sauce (for umami)
  • A pinch of minced ginger (to enhance flavor)
  • A pinch of black pepper
  • 2-3 Tbsp gochujang (Korean chili paste, for deep spiciness)
  • 2 stalks green onions (chopped)
  • 3 Tbsp minced garlic
  • 1 Tbsp sugar (to adjust sweetness)

Cooking Instructions

Step 1

First, rinse the cleaned chicken. Blanch it in vigorously boiling water for about 2-3 minutes. This step is crucial for removing any gamey odors, impurities, and excess fat from the chicken. After blanching, rinse the chicken under cold running water. Place the rinsed chicken in a pot, add the prepared onions, potatoes, and all the sauce ingredients.
