Main Ingredients
- 1 pack of Saengsaeng Udon (including noodles, liquid soup base, and flakes)
- 2 Korean rice cakes (tteokbokki tteok, about 100g, sliced into bite-sized pieces)
- 5-6 flat fish cakes (sliced lengthwise or prepared for skewering)
- 1/4 stalk of green onion (sliced thinly for fresh aroma)
- 5 cups of water (approx. 900ml)
Spicy Seasoning
- 1 Tbsp Gochujang (Korean chili paste, approx. 15g)
- 2 Tbsp Gochugaru (Korean chili flakes, approx. 10g, adjust to spice preference)
- 1 Tbsp Soy Sauce (approx. 15ml, for umami)
- 1 Tbsp Minced Garlic (approx. 10g, for rich flavor)
- 1 Tbsp Cooking Wine (Mirin or Sake, approx. 15ml, to remove any raw taste)
- 1 Tbsp Sugar (approx. 10g, to mellow the spiciness)
- A pinch of Black Pepper (for added aroma)
- 1 Tbsp Gochujang (Korean chili paste, approx. 15g)
- 2 Tbsp Gochugaru (Korean chili flakes, approx. 10g, adjust to spice preference)
- 1 Tbsp Soy Sauce (approx. 15ml, for umami)

Cooking Instructions
Step 1
Prepare the fish cakes and rice cakes. You can slice the rice cakes into bite-sized pieces or thread them onto skewers alternately with the fish cakes for a visually appealing presentation and easier eating. For the flat fish cakes, slice them lengthwise or fold them a few times before skewering.
Step 2
Wash and thinly slice the green onion. This will add a fresh aroma and a pleasant crispness when added at the end.
Step 3
In a small bowl, combine all the spicy seasoning ingredients: 1 Tbsp Gochujang, 2 Tbsp Gochugaru, 1 Tbsp Soy Sauce, 1 Tbsp Minced Garlic, 1 Tbsp Cooking Wine, 1 Tbsp Sugar, and a pinch of Black Pepper. Mix well. Preparing the seasoning mix in advance will save you time.
Step 4
Pour 5 cups of water (approx. 900ml) into a pot. Add the liquid soup base from the Saengsaeng Udon package and 2/3 of the prepared spicy seasoning mix. The remaining 1/3 can be added later to adjust the taste. Bring the broth to a boil to allow the flavors to meld.
Step 5
Once the broth is boiling, add the prepared fish cakes and rice cakes. Cook for about 5 minutes, allowing the rice cakes to soften and the fish cakes to absorb the flavorful broth.
Step 6
Add the udon noodles and continue to cook for another 5 minutes. Keep an eye on the cooking time to prevent the noodles from becoming mushy, and stir occasionally to prevent them from sticking together. These noodles cook quickly, so timing is key.
Step 7
Finally, add the udon flakes and the sliced green onions. Simmer for another moment. Taste and adjust seasoning with the remaining spicy sauce if needed. Your warm and spicy Fish Cake Udon is ready to be enjoyed!
