Spicy Jjamppong Pasta Recipe

Main Ingredients
- Pork (cut into bite-sized pieces): 50g
- Fresh Seafood (shrimp, squid, mussels, etc.): 100g (optional)
- Pasta (spaghetti, linguine, etc.): 1 serving (choose according to your preference)
- Milk: 1 cup (200ml)
Sauce Ingredients
- Garlic Wasabi Sauce: 2 Tbsp
- Gochujang (Korean chili paste): 1 Tbsp
- Truffle Sauce: 2 Tbsp (optional, adds depth of flavor)
- Olive Oil: 2 Tbsp

Cooking Instructions
Step 1
First, cut the pork into bite-sized pieces and soak them in 1 cup of milk for 10 minutes to tenderize and remove any gamey smell. Gently pat them dry with paper towels. If using seafood, clean and prepare it. Cook the pasta in boiling water with a pinch of salt (or omit if using herbal salt) for 1-2 minutes less than the package instructions, aiming for al dente. Reserve about 1 cup of the pasta water before draining. Heat olive oil in a pan over low heat, and sauté minced garlic and dried chili/peperoncino (optional) until fragrant.
Step 2
Once the garlic is fragrant, add the drained pork to the pan and stir-fry over medium heat until browned. Then, add the garlic wasabi sauce and gochujang, stirring well to coat the pork. If using seafood, add it now and cook until just done.
Step 3
As the sauce begins to thicken, stir in the truffle sauce (optional) and oregano rubbed. Add the pre-cooked pasta to the pan. Pour in about half a cup of the reserved pasta water to help the sauce coat the noodles. Continue to stir-fry for 1-2 minutes, allowing the sauce to meld with the pasta. Taste and adjust seasoning with herbal salt (or regular salt) and black pepper as needed. Once everything is well combined, remove from heat and serve immediately.
