Main Ingredients
  • 1 pack Oyster Mushrooms (approx. 200g)
  • 1 handful Fiddlehead Ferns (boiled, approx. 50g)
  • 100g Beef for stew

Seasoning & Broth
  • 2 Tbsp Soy Sauce for soup
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Fish Sauce
  • Pinch of Black Pepper
  • 1 Tbsp Sesame Oil
  • Salt (to taste)
  • 1000ml Anchovy-Kelp Broth (approx. 4 cups)
  • 1 Tbsp Natural Seasoning Powder (optional)

Cooking Instructions

Step 1

First, prepare the oyster mushrooms by trimming the tough ends and tearing them into bite-sized pieces (about 3-4 cm) with your hands. If using pre-boiled fiddlehead ferns, rinse them under water and drain. If using dried fiddlehead ferns, soak and boil them thoroughly before use. Lightly pat the beef for stew with paper towels to remove excess blood.

Step 2

Heat 1 Tbsp of sesame oil in a pot over medium heat. Add the torn oyster mushrooms, beef for stew, and prepared fiddlehead ferns. Add 2 Tbsp soy sauce for soup, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp fish sauce, a pinch of black pepper, and (optionally) 1 Tbsp natural seasoning powder. Stir-fry everything together for about 2-3 minutes. Stir-frying the ingredients with the seasonings enhances the depth of flavor.

Step 3

Once the beef is lightly browned on the outside, pour in 1000ml of the anchovy-kelp broth. Bring it to a rolling boil over high heat. Once boiling, reduce the heat to medium and simmer for another 5 minutes to allow the flavors to meld.

Step 4

When the broth is bubbling and fragrant, add the torn oyster mushrooms. Wait for the stew to come back to a boil. The mushrooms will cook and add a refreshing taste to the broth. Taste the broth and add salt as needed to adjust the seasoning. Remember that soy sauce and fish sauce have already been added, so it’s best to season gradually at the end.

Step 5

After adding the mushrooms and the stew returns to a boil, continue to simmer over medium-low heat for about 10-15 minutes, until all ingredients are tender. Finally, add a generous amount of diagonally sliced green onions and simmer for another moment to finish. Your delicious oyster mushroom stew is ready! Enjoy it hot with a bowl of rice.
