- Cooking Wine (like Mirin) 1 Tbsp

Then, add 1 tablespoon of coarse salt, a pinch of black pepper, a thumb-sized piece of ginger, 7 whole garlic cloves, the green onion provided by the butcher, 1 teaspoon of coffee powder, 1 tablespoon of cooking wine, and 2/3 cup of soju. Cover the pot (optional, but can help retain heat) and bring to a boil over high heat. Cook until the pork rinds are tender and soft.

Once the pork rinds are boiled, carefully remove them from the pot and rinse them thoroughly under cold running water. Check the inside of the rinds for any excess fat or impurities and trim them away.
