We’re trying a delightful pan-fried croaker recipe using two fresh croaker fish. Coating them lightly in flour before frying not only helps reduce any fishy odor but also results in a beautifully golden-brown and crispy exterior, while keeping the flesh moist and wonderfully firm. Ingredients
  • 2 fresh croaker fish
  • 1/3 cup all-purpose flour
  • 2 Tbsp cooking oil

Cooking Instructions

Step 1

When purchasing fresh croaker from the market, it’s a good idea to ask them to lightly salt it for you. Once home, begin by trimming the fins and tail neatly to prepare the fish for cooking. Remember to also clean and remove the innards thoroughly.

Step 2

Coating the croaker with flour can be made simple. Place the flour in a large zip-top bag or any plastic bag, add the prepared fish, and gently shake to ensure an even coating. (Tip: You might think of this method later, but doing it upfront makes the process much smoother.)

Step 3

Transfer the floured croaker to a wide plate or tray. Gently roll the fish to ensure the flour evenly coats both sides. Lightly shake off any excess flour to prevent a thick coating, which can make the fish greasy.

Step 4

Heat a pan over medium heat and add about 2 tablespoons of cooking oil. Once the oil is shimmering and sufficiently hot, carefully place the prepared croaker into the pan to begin frying.

Step 5

When one side of the croaker is about 70% cooked and has turned a nice golden-brown color, carefully flip it over. Cook the other side until it’s also golden-brown and crispy. You can tilt the pan slightly and spoon some of the hot oil over the fish to ensure even cooking.

Step 6

Once perfectly fried, arrange the croaker on a serving plate. For an extra touch of flavor, you can squeeze a little fresh lemon juice over the fish just before serving. It adds a lovely citrusy brightness that complements the fish beautifully. Serve immediately while warm for the best texture.
