Spicy & Sweet Glaze
  • 1 heaping Tbsp gochujang (Korean chili paste)
  • 1.5 Tbsp soy sauce
  • 1 Tbsp mirin (or cooking sake)
  • 0.5 Tbsp cheongju (or soju/rice wine)
  • 0.5 Tbsp ketchup
  • 1 Tbsp honey (or corn syrup)
  • 1 Tbsp minced garlic
  • 0.5 Tbsp sugar

Cooking Instructions

Step 1

Cut the 300g of chicken breast into bite-sized pieces, about 2.5-3cm cubes. Make them moderately thick so they remain juicy and moist after cooking.

Step 2

In a bowl, combine the cut chicken breast with 1 Tbsp of mirin, a pinch of salt, and a pinch of black pepper. Gently mix and let it marinate for about 30 minutes. Mirin helps to remove any gaminess from the chicken and tenderizes the meat.

Cut the green onions into segments approximately 4cm long, matching the thickness and size of the chicken pieces. The sweetness of the green onions will complement the chicken’s flavor.

Preheat your oven to 200°C (400°F) for 5 minutes. Place the baking sheet with the skewers in the preheated oven and bake for about 5 minutes. This initial bake helps to lightly cook the surface of the chicken, preparing it to absorb the glaze.

Remove the skewers from the oven. Using a silicone brush or a spoon, generously brush the prepared glaze all over the chicken and green onions on both sides. Applying the glaze in thin layers helps prevent burning.
