Step 1

If you’ve purchased whole bamboo shoots, first peel off the outer layers. Soak the inner shoots in cold water for about a day to remove any bitterness. Afterward, soaking them in rice water or plain water for over two hours will make them even more tender. Once drained, cut the bamboo shoots into bite-sized pieces, about 2-3 cm in length.
