Cooking Instructions

Step 1

If your king oyster mushrooms still have their base attached, you can trim it cleanly by cutting across the bottom of the packaging before opening it. This prevents the mushrooms from falling apart too much.

Step 2

Gently rinse the trimmed mushrooms under cool running water and shake off excess moisture, or lightly wipe them with a damp paper towel or cloth. Avoid washing them for too long, as they can become mushy.

Step 3

For a spicy kick, finely mince the chili pepper after removing the seeds and pith. Also, chop the scallions into small pieces for garnish. Aim for a similar size for a visually appealing finish.

Step 4

In a small bowl, combine 1 Tbsp of fire chicken sauce, 1/2 Tbsp of gochujang, 1/2 Tbsp of brown sugar, 1/2 Tbsp of soy sauce, 1 tsp of minced garlic, and 1 tsp of ketchup. Ketchup adds a nice tang and gloss.

Whisk or stir the sauce ingredients until the sugar is completely dissolved and everything is well combined. A smooth, uniform sauce will ensure the best flavor.

Now, let’s stir-fry! Heat 1 Tbsp of cooking oil in a pan over medium heat. Once the oil is shimmering, spread the prepared king oyster mushrooms evenly in the pan. Try not to overcrowd it.
