How to Make Delicious Green Onion Kimchi Easily
I bought plenty of green onions that were on sale at the market and made this simple green onion kimchi using a recipe inspired by Baek Jong-won. The pungent yet sweet flavor of the green onions, combined with the savory kimchi seasoning, creates a unique delicacy, different from scallion kimchi. It’s a truly special dish!
Key Ingredients
- 6 stalks fresh green onions
- 1 medium onion
- 6 Tbsp anchovy sauce (fish sauce)
- 7 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp brown sugar
- 1 Tbsp minced garlic
- 1.5 Tbsp salted fermented shrimp (saeujeot), finely minced
Cooking Instructions
Step 1
First, wash the green onions thoroughly. Trim off the roots and cut them into large pieces, about 5-6 cm long. This size helps the seasoning penetrate well without the onions becoming mushy. Ensure they are cut into substantial, bite-sized pieces.
Step 2
Now, we’ll season the green onions. Similar to making kimchi, generously pour 6 tablespoons of anchovy sauce over the cut green onions. Make sure the sauce coats the onions evenly. This step helps to soften the green onions and enhance their flavor.
Step 3
Gently toss the green onions with the anchovy sauce to ensure it’s well distributed. Let them sit for about 10 minutes to soften and absorb the seasoning. You can toss them once or twice more during this resting period for better results.
Step 4
Thinly slice the onion, which pairs wonderfully with green onions. Add the sliced onion to the salted green onions. The sweetness of the onion will balance the pungent flavor of the green onions and add another layer of taste.
Step 5
It’s time to make the delicious kimchi seasoning! Add 7 tablespoons of gochugaru, 2 tablespoons of brown sugar, 1 tablespoon of freshly minced garlic, and 1.5 tablespoons of finely minced salted fermented shrimp (saeujeot) to the mixture. Minced saeujeot integrates more smoothly into the seasoning.
Step 6
Once all the seasoning ingredients are in, it’s time to mix everything thoroughly! Use your hands to vigorously mix (‘barak-barak’) the green onions, onions, and seasoning until everything is well combined. Ensure the seasoning coats every part of the green onions and onions.
Step 7
Enjoy it immediately for a fresh and crisp ‘geotjeori’ (fresh kimchi) style with a spicy and slightly sweet taste! If you let it ferment in the refrigerator, the flavors will deepen and the texture will become softer, offering a different, aged kimchi experience. Enjoy it right away or let it ripen to your preference!
