- 1/2 pack enoki mushrooms (or 1 whole pack)
- 1 stalk green onion
- 2 Tbsp grapeseed oil

- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic
- 1 Tbsp corn syrup or honey
- 1 Tbsp plum extract (maesilcheong)
- 1/2 Tbsp sesame oil
- A pinch of toasted sesame seeds
- A pinch of salt (for stir-frying)
- A pinch of black pepper
- 3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic
- 1 Tbsp corn syrup or honey
- 1 Tbsp plum extract (maesilcheong)

Cooking Instructions
Step 1
Gently wash the fresh shiitake mushrooms under running water. Trim off the tough stems, then slice the caps into 3-4 bite-sized pieces. Slicing them not too thinly will help maintain a pleasant texture after cooking.

Peel the onions and slice them into thick strips, about 0.5 cm thick. If you slice them too thinly, they might become mushy when cooked. Cut the green onion into diagonal slices, about 0.5 cm thick. For the enoki mushrooms, trim off the base with a knife. Carefully hold the cluster together and rinse just the roots under running water. Gently shake off excess water. If the enoki mushrooms are tightly clumped, gently separate them slightly to prepare for stir-frying.
