Ingredients
  • 5 ripe cherry tomatoes
  • 1 packet Nongshim Potato Noodles
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced (or 1/2 tsp minced garlic)
  • A little dried seaweed (for garnish)

Cooking Instructions

Step 1

Gather your stars: 5 ripe cherry tomatoes and 1 packet of Nongshim Potato Noodles, known for their chewy texture. Using tomatoes from your fridge is a great way to reduce waste!

Step 2

Wash the tomatoes thoroughly under running water and remove the stems. Then, cut them into quarters, slightly larger than bite-sized. This size helps to release more tomato flavor into the broth.

Step 3

Heat 1 tablespoon of olive oil in a pot over medium heat. Add the quartered tomatoes and the minced garlic (about 2 cloves’ worth, or 1/2 tsp pre-minced garlic). The garlic aroma will meld beautifully with the tomatoes, enhancing the overall flavor.

Step 4

Pour 1 cup (about 200ml) of water into the pot. Cook the tomatoes with the water until they soften and a delicious broth begins to form. The tomatoes will break down, creating a natural sauce base for your ramen.

Step 5

Once the tomatoes are cooked and the liquid is simmering, add the potato noodles, the ramen soup base, and 1 tablespoon of chili powder for a spicy kick. Feel free to adjust the chili powder to your preference. Cover the pot and let it boil until the noodles are cooked (Nongshim Potato Noodles typically take about 3-4 minutes).

Step 6

When the ramen is perfectly cooked, turn off the heat. Carefully transfer the appetizing tomato ramen into a serving bowl. Finely snip some dried seaweed with scissors and sprinkle it over the top as a garnish. The umami from the seaweed complements the tomato ramen wonderfully.

Step 7

Voila! Your mouth-watering tomato ramen is ready. I was really curious about how it would taste since this was my first time making it.

I ladled some of the warm tomato ramen into a small bowl and took a bite. ‘Wow, why haven’t I made this combination sooner?’ I thought to myself. I immediately understood why people love tomato ramen.

Step 9

Many other tomato ramen recipes suggest using tomato juice for convenience, but I was worried it might be too sweet. So, instead, I used a generous amount of fresh tomatoes to really capture their natural flavor and richness. The taste is quite similar to a spicy, rich tomato pasta! It was truly delicious (haha).
