  • Bok Choy 3 heads (trim the base and cut lengthwise into 2-3 pieces)
  • Red Chili Pepper 1 (seeded and thinly julienned)
  • Green Chili Pepper 1 (seeded and thinly julienned)
  • Cooking Oil 2 Tbsp
  • Water 1 cup (approx. 200ml)

Sauce

  • Soy Sauce 3 Tbsp
  • Oyster Sauce 2 Tbsp
  • Sugar 1/2 Tbsp
  • Cooking Wine (e.g., Mirin) 1 Tbsp
  • Anchovy Sauce/Fish Sauce 1 Tbsp (can substitute with fish sauce if unavailable)
  • Perilla Oil 2 Tbsp
  • Sesame Seeds 1 Tbsp
  • Black Pepper a pinch

Cooking Instructions

First, soak the glass noodles in cold water for at least 1 hour until fully softened. Soft noodles will be chewy and delicious when stir-fried. Wash and peel the carrot and onion, then thinly julienne them.
