Crispy Bok Choy and Chewy Glass Noodles Stir-Fry Recipe
This is a delicious dish made by stir-frying fresh bok choy with glass noodles that have been pre-soaked until tender. The crispy bok choy, chewy glass noodles, and savory sauce create a perfect combination, making it an excellent side dish for rice or a great snack!
Main Ingredients
- Soaked Glass Noodles 460g (Soak in water for at least 1 hour beforehand)
- Carrot 1/2 (thinly julienned)
- Onion 1/2 (thinly julienned)
- Green Onion 1/2 stalk (thickly julienned)
- Bok Choy 3 heads (trim the base and cut lengthwise into 2-3 pieces)
- Red Chili Pepper 1 (seeded and thinly julienned)
- Green Chili Pepper 1 (seeded and thinly julienned)
- Cooking Oil 2 Tbsp
- Water 1 cup (approx. 200ml)
Sauce
- Soy Sauce 3 Tbsp
- Oyster Sauce 2 Tbsp
- Sugar 1/2 Tbsp
- Cooking Wine (e.g., Mirin) 1 Tbsp
- Anchovy Sauce/Fish Sauce 1 Tbsp (can substitute with fish sauce if unavailable)
- Perilla Oil 2 Tbsp
- Sesame Seeds 1 Tbsp
- Black Pepper a pinch
- Soy Sauce 3 Tbsp
- Oyster Sauce 2 Tbsp
- Sugar 1/2 Tbsp
- Cooking Wine (e.g., Mirin) 1 Tbsp
- Anchovy Sauce/Fish Sauce 1 Tbsp (can substitute with fish sauce if unavailable)
- Perilla Oil 2 Tbsp
- Sesame Seeds 1 Tbsp
- Black Pepper a pinch
Cooking Instructions
Step 1
First, soak the glass noodles in cold water for at least 1 hour until fully softened. Soft noodles will be chewy and delicious when stir-fried. Wash and peel the carrot and onion, then thinly julienne them.
Step 2
Thickly julienne the green onion. Seed the red and green chili peppers and thinly slice them diagonally to add color to the dish.
Step 3
Trim the base of the bok choy and wash it thoroughly. Then, cut it lengthwise into 2-3 pieces. Cutting them too short can make them mushy when cooked, so longer pieces are recommended.
Step 4
In a small bowl, combine 3 Tbsp soy sauce, 2 Tbsp oyster sauce, 1/2 Tbsp sugar, and 1 Tbsp cooking wine. Stir well to create a flavorful sauce. Ensure all ingredients are dissolved.

Prepare a wide pan or wok. Add 2 Tbsp of cooking oil and heat over medium heat. While not in the original recipe, you can sauté 1/2 Tbsp of minced garlic until fragrant for enhanced flavor.

Add the pre-soaked glass noodles to the pan and stir-fry. Gently stir with a spatula to prevent the noodles from sticking together.

Pour the prepared sauce over the noodles and continue to stir-fry. Keep stirring to ensure the sauce coats the noodles evenly. Maintain medium heat during this step.

Once the noodles are almost cooked and the sauce has thickened slightly, add the julienned carrots, onions, and green onions. Stir-fry together until the vegetables are slightly tender.

Push the stir-fried noodles and vegetables to one side of the pan. Add the sliced bok choy, red chili peppers, and green chili peppers to the empty space. Stir in 1 Tbsp of anchovy sauce (or fish sauce) to add umami and season the entire dish. Stir-fry just until the bok choy becomes crisp-tender – this is the key to maintaining its crunch.
Step 10
Finally, drizzle in 2 Tbsp of perilla oil for added aroma and a pinch of black pepper. Mix all ingredients together and stir-fry for about 1 more minute. Avoid overcooking to preserve the fresh aroma of the perilla oil.

Sprinkle 1 Tbsp of sesame seeds generously for an extra nutty flavor and give it a final light mix.
