Step 1

First, prepare a pan with some depth. Pour 1 cup (200ml) of whole milk into the pan. We recommend using whole milk if possible, as low-fat milk might result in a less rich flavor. This will help create a rich and smooth taste.

Step 2

Measure out 3 tablespoons (about 30g) of curry powder. You can add it directly to cold milk and boil while dissolving, but adding it when the milk is slightly warm will help it dissolve much smoother without clumps. If you have any ingredients you want to add, now is the time! For example, if you have leftover ham or bacon, dicing it and adding it can create an even more flavorful dish.

Step 3

Now, place the pan over medium-low heat. Stir continuously with a spatula or ladle, ensuring the curry powder dissolves completely without clumping. Simmer for about 2 minutes to fully incorporate the curry powder. Be careful not to let it burn by using heat that’s too high.

After simmering for 2 minutes and the curry powder is well-dissolved, crack 1 egg into the pan. You can cook the egg as is, or gently stir it to mix with the curry.
