Main Ingredients
- 2-3 Tbsp chopped kimchi (aged kimchi tastes even better!)
- 1/3 block Spam or ham, diced
- 1 handful green onions, finely chopped
- 80g canned tuna, drained lightly
- 1 bowl of warm cooked rice

- 1 Tbsp soy sauce
- 0.5 Tbsp sugar
- 2 Tbsp mayonnaise
- 0.5 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
Chop the kimchi into small, bite-sized pieces. Using aged or sour kimchi will add a deeper, richer flavor.
Step 2
In a medium bowl, combine the chopped kimchi with all the seasoning ingredients: soy sauce, sugar, mayonnaise, and gochugaru. Mix thoroughly with your hands, ensuring the kimchi is evenly coated. Marinating the kimchi beforehand helps it absorb the flavors better.
Step 3
Heat a little cooking oil in a frying pan over medium heat. Add the marinated kimchi, diced ham, and chopped green onions. Stir-fry until the kimchi becomes soft and the aromas of the ham and green onions are released.
Step 4
Once the kimchi starts to look a bit more tender and less clumped, add the warm cooked rice. Use a spatula to gently break up the rice and mix it with the kimchi mixture, being careful not to mash the rice grains. Ensure every grain is coated with the delicious seasoning.

After the rice and kimchi are well combined, add the canned tuna and gently stir it in. If you like extra flavor, you can add some of the tuna’s oil for a richer taste. Alternatively, you can drain it well for a lighter version.
