Main Ingredients
- 850g Chicken (young chicken or native chicken)
- 1 White part of Leek
- 5-10 cloves Garlic
- 10 Peppercorns

Cooking Instructions
Step 1
First, trim the fatty part around the tail of the chicken and the tips of the wings with scissors. This helps reduce any gamey odor and results in a cleaner broth.
Step 2
Place the prepared chicken in a pot and sear it over medium heat until the surface is lightly golden brown. Searing the chicken adds a savory depth of flavor and firms up the meat, preventing it from falling apart during cooking.
Step 3
While the chicken is searing, roughly chop the leek and peel the garlic cloves. These aromatics will help remove any unwanted chicken smell and contribute to a refreshing broth.
Step 4
Add the seared chicken, prepared leek, garlic, and peppercorns to the pot. Pour in 1.5 liters of water. Bring to a boil over high heat and simmer for 30 minutes, allowing the chicken’s delicious essence to infuse the water. Skim off any foam that rises to the surface during simmering for a clearer soup. Finally, season with salt to your preference.
Step 5
Serve the finished Dak Gomtang generously in bowls. You can enjoy it with rice, or shred the chicken and eat it with rice for a satisfying meal. Leftover broth can be chilled, the solidified fat skimmed off, and refrigerated for consumption over several days.
