Main Ingredients
- 2 fresh eggs
- 1 bowl of cooked rice (approx. 200g)

- 1 Tbsp soy sauce
- A pinch of salt

- 2 Tbsp cooking oil

Cooking Instructions
Step 1
In a bowl, crack 2 fresh eggs. Add a small pinch of salt to enhance the flavor. Whisk gently with chopsticks or a whisk until the yolk and white are well combined. Heat 2 tablespoons of cooking oil in a pan over medium heat. Pour in the beaten eggs. Use chopsticks to stir and scramble the eggs as they cook, creating a fluffy and soft texture, similar to scrambled eggs. Be careful not to overcook; aim for a moist consistency!
Step 2
You can wipe the pan used for the eggs with a paper towel, or use a clean pan. Reheat the pan over medium heat and add a little cooking oil. Add 1 bowl of warm cooked rice and 1 tablespoon of soy sauce. Gently stir with a spatula or spoon, ensuring the soy sauce evenly coats each grain of rice and preventing clumps. Stir-fry until the rice grains are slightly separate and heated through for the best flavor.
Step 3
Once the rice is nicely stir-fried, place the soft, scrambled-style egg you prepared earlier on top of the rice. Finally, drizzle 1 tablespoon of sesame oil over everything for a rich, nutty aroma. Gently mix everything together, ensuring the rice, egg, and sesame oil are well combined. The key is to mix softly to avoid mashing the rice grains.
Step 4
Transfer the well-mixed, delicious soy sauce egg rice to a nice bowl. It’s ready to serve! This is a wonderfully simple yet satisfying meal. It’s a fantastic option when you don’t have many side dishes available, so be sure to make it when you’re feeling peckish!
