Ingredients
  • 1 packet Konjac Noodles
  • 1 packet store-bought Naengmyeon broth
  • 1/4 Cucumber
  • Small piece of Carrot
  • 1/2 Hard-boiled Egg
  • 1/2 Cheongyang Pepper (Korean chili)
  • 1/2 Red Chili Pepper
  • Pinch of Sesame Seeds

Cooking Instructions

Step 1

Konjac noodles are made from alginic acid extracted from the roots of the konjac plant. They are composed of over 97% water and contain only about 5 kcal per 100g, making them a popular diet food that provides a sense of fullness and aids in digestion.

Step 2

In a large pot, bring plenty of water to a boil. Once boiling, add 1 tablespoon of vinegar and 1/2 teaspoon of salt. Gently blanch the konjac noodles for about 30 seconds to 1 minute. This step helps to remove any potential odor from the konjac and improves its texture.

Step 3

Drain the blanched konjac noodles using a colander and rinse them thoroughly under cold running water. Ensure to drain out as much water as possible. Keeping the konjac noodles chilled is key to a refreshing bowl of konjac naengmyeon.

Step 4

Wash the cucumber well and thinly julienne it, avoiding the seedy center. Similarly, peel and thinly julienne the carrot. Prepare half a hard-boiled egg, a great source of protein essential for a healthy diet.

Step 5

Pour 1 packet of store-bought naengmyeon broth into a serving bowl. (Pro Tip: Store-bought broth can be surprisingly high in calories. If you’re dieting, consider using only about half a packet or opting for a low-calorie broth alternative.)

Step 6

Carefully place the chilled konjac noodles into the bowl with the broth. Artfully arrange the julienned cucumber and carrot, along with the half hard-boiled egg on top. For a touch of heat, add thinly sliced Cheongyang peppers, and use red chili pepper slices for a vibrant color contrast. Finally, sprinkle a pinch of toasted sesame seeds for a nutty aroma, and your cool and delicious super simple konjac noodles are ready!
