Main Ingredients
  • 1/2 Korean radish (approx. 300-400g)

Seasoning & Aromatics
  • 1/2 Tbsp salt (adjust to taste)
  • 1 Tbsp minced garlic
  • 1 handful chopped green onions (approx. 1/4 cup)
  • 1 Tbsp olive oil
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, peel and thoroughly wash the radish. Then, use a mandoline slicer or a knife to thinly and evenly julienne the radish. Ensuring consistent thickness of the julienned radish will help it cook at a similar rate, leading to a delicious result. If cut too thick, it might take longer to cook, so keep that in mind.

Step 2

Place all the julienned radish into a wide pot. Drizzle 1 tablespoon of olive oil evenly over it. Pre-mixing the olive oil with the radish like this helps the namul cook up moist and tender.

Step 3

Cover the pot with a lid and steam over low heat for about 10 minutes. Occasionally open the lid and stir the radish. This ensures the radish cooks evenly and prevents it from sticking to the bottom. Cook until the radish becomes translucent, wilts, and softens.

Step 4

Once sufficient moisture has been released from the radish, add 1 tablespoon of minced garlic, 1 handful of chopped green onions, 1/2 tablespoon of salt, and finally, 1 tablespoon of fragrant sesame oil. Gently mix everything together, ensuring the seasonings are well distributed. Cover again and cook on low heat for another 5 minutes until the radish namul is perfectly done. Taste and add a little more salt if needed.
