Ingredients
  • 1 Tbsp Butter
  • 1/4 Onion, finely chopped or sliced
  • 50g Ham, cut into bite-sized pieces (e.g., Spam, canned ham)
  • 1/2 cup Well-fermented Kimchi, finely chopped
  • A little Green Onion, finely chopped
  • 1/2 Korean Chili (optional), finely chopped
  • 1 bowl Warm Cooked Rice
  • 1 Egg

Cooking Instructions

Step 1

Prepare your ingredients by taking out any leftover vegetables from the fridge (like onions, carrots, zucchini, etc.) and chopping them into bite-sized pieces. If you have ham or sausage, chop that up too. For the kimchi, remove any excess brine and finely chop it; this makes it more distinct and delicious when stir-fried.

Step 2

Melt 1 tablespoon of butter in a heated pan over medium-low heat. The butter will add a wonderful richness and depth of flavor to your kimchi fried rice.

Step 3

Once the butter has melted, add the chopped kimchi to the pan and stir-fry over medium heat. It’s important to cook the kimchi until it softens and the sharp sourness mellows. A little sugar (about 1/2 tsp) can be added at this stage to balance the acidity and enhance the umami flavor (optional).

Step 4

After the kimchi has softened nicely, add all the other prepared ingredients: the chopped onion, ham, green onion, and Korean chili (if using). Stir-fry everything together. Cooking over high heat for a short time helps maintain the vegetables’ crispness.

Step 5

Continue to stir-fry for another 2-3 minutes until all the ingredients are well combined and fragrant. You’ll know it’s ready when a delicious aroma fills your kitchen.

Step 6

Add the warm cooked rice to the pan with the stir-fried ingredients. If the rice is clumpy, gently break it apart with your spatula as you stir.

Step 7

Stir-fry everything together over medium-low heat for about 3-4 minutes, ensuring the rice is thoroughly mixed with the kimchi and other ingredients. Press down gently with your spatula to help the flavors meld into each grain of rice. Taste and season with soy sauce or salt if needed, depending on the saltiness of your kimchi.

Finally, fry an egg sunny-side up in a separate pan and place it on top of your kimchi fried rice for a visually appealing and incredibly delicious meal! You can also garnish with crumbled seaweed or sesame seeds for extra flavor.
