I recently bought two bags of potatoes intending to make buttered potatoes, a popular roadside snack. While looking for ways to use the leftovers, I thought a sweet and savory soy-glazed dish with Spam would be a hit with kids. This recipe combines the salty goodness of Spam with tender potatoes, creating a flavor explosion that’s incredibly addictive and perfect for any meal.
Main Ingredients
- 2 medium potatoes
- 300g Spam (1 can)

- 2 Tbsp Oligosaccharide (or corn syrup)
- 1 cup (200ml) Water
- 2 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, prepare the potatoes. Peel the potatoes and cut them into bite-sized cubes. Ensuring uniform size helps them cook evenly. Aim for cubes about 1-inch (2.5cm) in size.
Step 2
Next, prepare the Spam. Cut the Spam into cubes that are roughly the same size as the potatoes. Matching the ingredient sizes makes the dish visually appealing and helps the flavors meld together beautifully.
Step 3
In a wide pot or deep pan, add the cubed potatoes. Pour in 2 tablespoons of oligosaccharide for sweetness and 1 cup (200ml) of water. Cover the pot and cook over medium heat for about 10-15 minutes, or until the potatoes are tender when pierced with a fork. Don’t let all the water evaporate just yet.
Step 4
Once the potatoes are mostly tender and most of the water has evaporated, add 2 tablespoons of soy sauce for savory depth and 2 tablespoons of mirin to enhance flavor and remove any potential gamey taste from the Spam. Stir gently and continue to simmer over medium-low heat, allowing the potatoes to absorb the glaze.
Step 5
To reduce the saltiness and fat from the Spam, blanch it in boiling water for about 5 minutes. Drain the Spam and add it to the pot with the potatoes. Stir everything together and continue to cook for another 2-3 minutes, allowing the Spam to soak up the delicious glaze. Toss occasionally to ensure even coating.
Step 6
Finally, stir in 1 tablespoon of honey for an extra touch of sweetness and a glossy finish. Cook for another minute until well combined. Turn off the heat and sprinkle with 1/2 tablespoon of toasted sesame seeds for a nutty aroma. This dish is perfect served over hot rice as a satisfying meal or as a flavorful side dish.
