Step 1

Introducing Sweet Corn, a seasonal delicacy that’s bursting with natural sweetness! Available only from June to July, this is the perfect time to savor its unique flavor.

Step 2

Fresh sweet corn has plump, juicy kernels. Carefully slice the kernels off the cob using a knife. Don’t discard the cob – we’ll be using it to infuse the rice with extra flavor! The subtle aroma from the cob adds a wonderful depth to the cooked rice.

Step 3

Rinse your rice thoroughly and place it into the electric pressure cooker. Add the sliced sweet corn kernels and the reserved corn cob. When adding water for cooking the rice, use slightly less than you normally would. Sweet corn contains a lot of moisture, so this helps prevent the rice from becoming too mushy. Select the ‘White Rice – High Pressure’ setting on your pressure cooker and begin cooking. For my specific cooker, this takes about 27 minutes. (Cooking time may vary depending on your pressure cooker model.)

Step 4

Voila! Your delicious Sweet Corn Rice is ready. Look at those vibrant kernels interspersed throughout the fluffy rice – it looks absolutely irresistible!

As a side note, I’ve made this rice without the corn cob before, and the taste was quite similar. The sweetness of the corn kernels alone is enough to make it delicious. Feel free to omit the cob if you prefer.
