Make Deliciously Sweet and Crispy Peanut Gangjeong Snack!
Let’s make a sweet and crispy snack: Peanut Gangjeong! This recipe is perfect for a delightful treat that’s both delicious and easy to make at home.
Ingredients
- 1.5 cups peanuts (use white, black, or red peanuts as preferred)
- 5 cups puffed brown rice (can be omitted)
- For the syrup: 1/2 cup sugar, 1/2 cup corn syrup
Cooking Instructions
Step 1
First, let’s bring out the wonderful aroma of the peanuts. Place 1.5 cups of peanuts in a dry pan without any oil. Toast them over low heat until they turn lightly golden and release a nutty fragrance. This dry roasting helps to remove moisture, ensuring a crispier final product. You can use any type of peanut you like, or a mix of them.
Step 2
Now, let’s make the sweet syrup that gives Gangjeong its signature flavor. In a saucepan, combine 1/2 cup of sugar and 1/2 cup of corn syrup. Place it over low heat. The key here is to let the sugar melt without stirring. Wait patiently until the sugar begins to dissolve on its own. Stirring too early can cause the sugar to crystallize and become hard.
Step 3
Once the sugar has completely melted into a clear syrup, immediately turn off the heat. Add the roasted peanuts and the puffed brown rice to the saucepan. Using a spatula or spoon, quickly mix everything together, ensuring that the peanuts and puffed rice are evenly coated with the syrup. It’s important to mix rapidly to prevent clumping.
Step 4
If you don’t have puffed brown rice, or if you prefer to focus solely on the peanut flavor, you can omit the puffed rice and make the Gangjeong with just peanuts. It will still be incredibly delicious and offer a satisfying peanut crunch.
Step 5
Can you already smell the deliciousness? You don’t necessarily need to use a mold for this! You can scoop portions with a spoon and shape them into small balls, or simply break off bite-sized pieces as it cools. Either way, you’ll end up with delightful peanut Gangjeong. It’s also a fun activity to make with children!
Step 6
If you prefer to set it in a mold for neat slices, lightly grease your chosen mold (square or round) with perilla oil or cooking oil. Tightly pack the peanut mixture into the mold, pressing down firmly with your hand or a spatula to create a compact layer. You can place a heavy cutting board or pot on top for a few minutes to help it set well. Once the Gangjeong has completely cooled, cut it into your desired serving pieces for a perfect homemade peanut Gangjeong!
