Cooking Instructions

Step 1

Let’s start by preparing the main ingredients: potatoes, onion, and green onion. Make sure they are all clean and ready to go!

Peel the potatoes and cut them into bite-sized cubes, about 0.5 to 1 cm thick. Dice the onion to a similar size as the potatoes. For the green onion, chop it into roughly equal pieces – it doesn’t need to be too precise as it will add flavor and aroma.

Place the cubed potatoes in a bowl. Add the 3.5 tablespoons of oligosaccharide, which will provide the sweetness. Gently toss the potatoes to coat them evenly with the sweetener. Let them sit for 20 minutes. This resting period allows the potatoes to release some moisture, ensuring they become extra tender and flavorful during cooking.

Step 4

While the potatoes are marinating, set aside the diced onion and chopped green onion in a separate dish. I usually use this 20-minute break to prepare another simple dish or do the dishes!

Step 5

After 20 minutes, you’ll notice some liquid in the bowl with the potatoes – this is natural moisture released by the potatoes, mixed with the oligosaccharide. Don’t discard this liquid! Pour the potatoes and all of this liquid into a pot with a lid. This flavorful liquid will form the base of your braising liquid.

Step 6

Arrange the prepared onion and green onion over the potatoes in the pot. Now, add the remaining seasonings: 2/3 tablespoon of minced garlic for pungency, 4 tablespoons of soy sauce for that classic salty flavor, and finally, 1/2 tablespoon of sesame oil for a nutty aroma. Add them all at once.

Step 7

Turn the heat to high. Gently stir all the ingredients in the pot to ensure they are evenly coated with the seasoning mixture. This helps distribute the flavors evenly.

Step 8

Once the liquid comes to a boil, immediately reduce the heat to medium-low. If you’re using an induction cooktop, a setting of ‘3’ is usually ideal. Cover the pot with a lid. Braising on low heat with the lid on prevents the potatoes from burning and ensures they cook until perfectly tender.

Step 9

Let the potatoes braise for a total of 9 to 10 minutes. About every 2 minutes, lift the lid and gently stir the contents to prevent them from sticking to the bottom of the pot. After 9 minutes, check the potatoes by piercing them with a chopstick or tasting a piece. Adjust the cooking time based on your preference for tenderness.
