  • 1/3 Tbsp toasted sesame seeds
  • 1/3 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare 300g of fresh ‘Seomcho’ sea parsley. First, wash it thoroughly under running water, carefully removing all soil, yellowed leaves, and any wilted parts. If the stalks are quite thick, cut them lengthwise into 2-3 pieces so the seasoning can penetrate evenly and make them more delicious.

Step 2

Bring a generous pot of water to a rolling boil. Add a pinch of coarse salt and briefly blanch the ‘Seomcho’ sea parsley. Avoid overcooking; blanching just until the leaves slightly wilt will preserve its crisp texture and nutrients.

Step 3

Immediately after blanching, drain the ‘Seomcho’ and quickly rinse it under cold running water to stop the cooking process and cool it down. Gently rinse it a couple more times to remove any bitterness or impurities. ‘Seomcho’ (similar to spinach) can contain oxalic acid. For a safer meal, soak the blanched sea parsley in clean water for about 5 minutes to effectively remove oxalic acid. This step is quite simple!

Step 4

Place the well-drained ‘Seomcho’ in a mixing bowl. Add the seasoning ingredients: 1 Tbsp fish sauce, 1/3 Tbsp toasted sesame seeds, 1/3 Tbsp sesame oil, and 1/3 Tbsp minced garlic. Gently toss everything together to coat the sea parsley evenly with the seasoning. Be careful not to mix too vigorously, as this can mash the delicate leaves.
