How to Make Abalone Cheese Bake with Festive Gifts

Hello everyone, it’s Seson Residence Dalsun! As the holidays approach, I know you’re all busy with preparations. This season is prime time for seafood, and among the many gifts received, abalone, often called the ‘king of seafood health food,’ is in its best season. I decided to make ‘Abalone Cheese Bake’ with the fresh abalone I had. Seafood tastes best and is most tender when cooked briefly. That’s why I opted to lightly grill it in the air fryer. Before we dive into the recipe, let’s briefly touch upon the amazing benefits of abalone. Abalone is rich in minerals like Vitamin, Potassium, Calcium, and Phosphorus, as well as protein. It also contains compounds like taurine, betaine, and arginine, which are known to aid liver detoxification, promote digestion, calm the nervous system, and help prevent cardiovascular diseases. It’s truly a treasure from the sea!

Ingredients
  • 6 fresh abalones
  • 1 Tbsp minced asparagus
  • 1 Tbsp minced green onion
  • 1/2 Tbsp minced red chili pepper
  • 1/2 tsp minced garlic
  • 1 Tbsp sake (or cooking wine)
  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • Shredded mozzarella cheese, to taste

Cooking Instructions

Step 1

First, let’s thoroughly clean the abalone to remove any grit. Use a soft brush to gently scrub the abalone meat and its edges, making sure to remove all impurities. Don’t forget to clean the inside of the shell as well.

Step 2

Now, it’s time to separate the abalone meat from its shell. Hold the abalone firmly with the thicker side facing outwards. Carefully insert a spoon or a thin knife between the shell and the abalone meat, pressing it firmly against the shell.

Step 3

While holding the shell steady, gently twist or push the spoon or knife forward to detach the abalone body from the shell. This might feel a bit tricky at first, but you’ll get the hang of it with a little practice.

Step 4

Once the abalone is separated from the shell, remove the digestive tract (intestines) and the mouthparts (beak). You can save the abalone guts to make a delicious abalone porridge later! Use kitchen scissors or a knife to carefully cut out the beak. Now, lightly score the top of the abalone meat in a crisscross pattern. This will help the sauce penetrate better and make the abalone even more flavorful.

Step 5

Let’s prepare the delicious seasoning sauce. Finely mince the green onion, asparagus, and red chili pepper. In a small bowl, combine 1 Tbsp minced asparagus, 1 Tbsp minced green onion, 1/2 Tbsp minced red chili pepper, 1/2 tsp minced garlic, 1 Tbsp sake, 2 Tbsp soy sauce, and 1 Tbsp sugar. Mix everything well until you have a smooth and savory sauce.

Step 6

Preheat your air fryer to 180°C (350°F). Place the cleaned abalone meat back into its shell. Spoon a generous amount of the prepared sauce over the abalone. Top it off with a good sprinkle of shredded mozzarella cheese. Now, place the abalone into the preheated air fryer and cook for about 5 to 10 minutes, or until the cheese is melted and golden brown. I found that 5 minutes was perfect for achieving a beautifully melted cheese topping. Enjoy your delicious Abalone Cheese Bake while it’s hot!
