Finally, the corn season we’ve all been waiting for has arrived! I order at least two boxes every year for my two kids’ snacks, and they are incredibly delicious even when boiled and stored in the freezer. This means we can enjoy corn all year round! (I’ll share my corn storage tips below too.) It’s always best to eat produce when it’s in season, so let’s make the most of it while it’s abundant.

Cooking Instructions
Step 1
First, prepare the corn by carefully trimming off the husks and silks. Be gentle to avoid damaging the kernels. Set the silks aside, as we’ll use them later.

Fill a large pot with enough water to completely submerge the corn. Now, for the secret to perfectly boiled corn! The golden ratio is 2 parts salt to 1 part sugar substitute (like Neosugar). If you prefer not to use a sugar substitute, you can use regular sugar instead, aiming for a 1:2 ratio of salt to sugar. If you have a sweet tooth, feel free to add a little more sugar.
Step 3
Add the corn silks you set aside earlier into the boiling water. The silks release a subtle, nutty sweetness that enhances the corn’s natural flavor. Don’t discard them; they are key to a richer taste!

Once the water comes to a rolling boil, cook the corn over high heat for about 20 minutes. Then, reduce the heat to medium and let it simmer gently for another 20 minutes. (Tip: For best results, especially with a larger batch like 30 ears, it’s recommended to boil them in two batches of 15. This might take about 2 hours total, but ensures even cooking and perfect sweetness.)

And here they are – perfectly boiled corn! Enjoying them piping hot right after cooking is truly a delight. The sweet, fragrant aroma of freshly boiled corn is irresistible.

Finally, let’s talk about storage! If you have more corn than you can eat at once, let it cool completely. Placing hot corn directly into airtight containers or bags can cause moisture loss, affecting its flavor and texture. Once fully cooled, place the corn in freezer bags, press out as much air as possible, and store them in the freezer. This way, you can enjoy delicious, almost freshly boiled corn for up to a year! To serve, simply thaw or briefly reheat the frozen corn.
