Cooking Instructions

Step 1

Begin by preparing all your ingredients. Wash and slice the zucchini and onion into thin, half-moon shapes (about 0.5 cm thick). Cut the firm tofu into bite-sized cubes (about 1.5 cm). If using mushrooms, tear or slice them. Finely chop the green onion and Korean chili pepper. Gently pat the beef brisket with paper towels to remove any excess moisture.

Step 2

In a pot, combine the 2 Tbsp of ssamjang, 1 Tbsp of doenjang, and 1/2 Tbsp of gochujang. Add a small drizzle of cooking oil and sauté over medium-low heat for about 1 minute. This step helps to deepen the savory flavors of the pastes. Pour in 2 cups of water and bring to a boil over high heat.

Step 3

Once the broth is boiling, add the prepared zucchini, onion, mushrooms, tofu, beef brisket, and Korean chili pepper. Let it simmer for about 5 minutes, or until the vegetables are tender.
