Don’t just discard the anchovies, radish, and kelp that you used to make savory soy sauce! You can transform them into flavorful side dishes with minimal effort. This recipe offers two simple ways to repurpose these ingredients: Anchovy Salad and Radish Salad.
Main Ingredients
- Radish used in savory soy sauce (julienned)
- Anchovies used in savory soy sauce (medium-sized)
Seasoning
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, take the radish and anchovies that were used in the savory soy sauce. Drain them well by placing them in a sieve. Since they’ve already absorbed the savory soy sauce flavor, there’s no need to wash them separately.
Step 2
If you are using anchovies, carefully remove any remaining heads and guts. If you’re using medium-sized anchovies, peeling them can make them even more tender. Once prepared, mix the anchovies with toasted sesame seeds and sesame oil. Gently toss everything together to create a delicious seasoned anchovy side dish.
Step 3
The radish used in the savory soy sauce should already be tender. Finely julienne the radish if it’s not already cut. In a bowl, combine the julienned radish with toasted sesame seeds and sesame oil. Gently mix until evenly coated. This results in a crunchy yet flavorful seasoned radish side dish. Both of these dishes make excellent accompaniments to a meal.
