Ingredients
  • 1/2 can Spam (approx. 200g)
  • About 3-4 Tbsp frying powder (enough to coat the Spam)
  • 1/2 medium onion
  • 1/2 Tbsp soy sauce
  • 1 Tbsp oligosaccharide (or sugar)
  • 4 large eggs
  • 1 serving cooked rice (warm)
  • Pinch of parsley flakes (for garnish)
  • Mayonnaise (generous amount, to taste)

Cooking Instructions

Step 1

Peel and thinly slice the onion. Aim for even, thin slices so they cook down nicely and blend well with the rice.

Step 2

Drain the Spam and cut it into approximately 1cm thick slices. Place the Spam slices into a plastic bag. Using a rolling pin, a bottle, or even your hands, firmly mash the Spam. You want it to break down but still retain some texture for a satisfying bite.

Step 3

Add the frying powder to the mashed Spam and mix thoroughly. The frying powder will create a crispy coating when fried. If the mixture seems too dry, you can add a tiny splash of water.

Step 4

Heat a generous amount of oil in a frying pan over medium heat. Carefully add the coated Spam pieces and fry until golden brown and crispy on all sides. Ample oil is key to achieving that perfect crispiness. Once fried, transfer the Spam to a plate lined with paper towels to drain excess oil.
