Vibrant and Delicious Vegetable Fried Rice Recipe!
Super easy vegetable fried rice you can make at home, both simple and incredibly tasty.
Using up various vegetables and semi-prepared ingredients from your fridge, you can easily make this delicious fried rice. This recipe is perfect for a quick yet satisfying meal.
Fried Rice Ingredients
- 1 potato (medium size)
- 1 onion (medium size)
- 1/2 zucchini
- 1 stalk green onion (about 10cm/4 inches long)
- 1 can Spam (small size)
- 2 tteokgalbi patties (store-bought)
Seasoning
- 1 tsp salt (coffee spoon measurement)
- 1 tsp salt (coffee spoon measurement)
Cooking Instructions
Step 1
Wash all vegetables thoroughly. Peel the potato and dice it into 1cm (about 1/2 inch) cubes. Dice the onion and zucchini into similar-sized pieces. Finely chop the green onion. Dice the Spam and tteokgalbi into bite-sized pieces.
Step 2
Heat 2-3 tablespoons of cooking oil in a pan over medium-high heat. Add the diced Spam and tteokgalbi and cook until golden brown and slightly crispy. This step adds great flavor from the rendered fat and improves the texture of the Spam and tteokgalbi.
Step 3
Push the cooked Spam and tteokgalbi to one side of the pan, or temporarily remove them. Add the diced potatoes to the pan and stir-fry for 2-3 minutes over medium heat. Once the potatoes are slightly softened, add the onion and zucchini. Continue to stir-fry until the vegetables become translucent.
Step 4
Once the vegetables are partially cooked, add the cooked rice. Using fluffy, day-old rice works best for fried rice, preventing it from becoming mushy. Gently break up any clumps of rice with your spatula and mix it evenly with the vegetables.
Step 5
After the rice is well combined with the vegetables, add the reserved cooked Spam and tteokgalbi back into the pan. Add the chopped green onions as well. Stir-fry everything together for another 2-3 minutes until well combined.
Step 6
Finally, add 1 teaspoon of salt to season. You can also add a pinch of black pepper if desired. Stir-fry gently to ensure the seasoning is evenly distributed throughout the fried rice. Your delicious vegetable fried rice is ready!
Step 7
Serve the hot vegetable fried rice in bowls. It’s even more delicious when topped with a fried egg or sprinkled with crumbled seaweed (gim).
